For the spelt-red cabbage roulades, first peel the onions and finely dice them.

Heat some oil in a pot and sauté the onions together with the spelt and deglaze with the vegetable soup. Simmer gently for 20-30 minutes.

In the meantime, separate the cabbage leaves and blanch them briefly.

Now mix the curd, chopped parsley and coriander to the spelt. Fill the blanched red cabbage leaves with the spelt mixture, roll it up and preferably pin it with small toothpicks.

Melt the coconut fat in a frying pan and fry the spelt-red cabbage rolls in it on all sides.
