For the savoy cabbage stew with mushrooms, soak the savoy cabbage in water overnight.

The next day, wash the savoy cabbage and cut into tender strips. Roughly dice the onion and fry in butter until light yellow. Add the green spelt with the soaking water and cook over medium heat for 5 minutes.

Add the savoy cabbage and a little water. Cook for 12-15 minutes until the cabbage is firm to the bite. In the meantime, clean the mushrooms and cut them into thick slices.

Mix the porcini mushroom stock, bouillon cubes and the mushrooms into the vegetables and let them steep for 5 minutes. Add the whipped cream and the herbs and season the savoy stew again.

Serve the savoy cabbage stew with mushrooms.
