Wash sauerkraut and cut a few times. Sauté rolled barley in lard. Deglaze with stock or water, add bay leaf, juniper berries, sugar and bacon rind. Mix in sauerkraut and simmer for 10-15 minutes. Season to taste and add more stock or water if needed. In a pan, roast lard with flour until light brown and thicken the cabbage with it. Season again and serve hot.
