For the sour milk gnocchi with berries, first prepare the berry sauce. Bring the berries, sugar, vanilla pulp, white wine and cinnamon stick to the boil in a saucepan and then reduce to a simmer over low heat.
Purée the berries as desired or leave them in coarser pieces. Save some berries in whole pieces. Bind the mixture with cornstarch and let cool. Remove the cinnamon stick.
For the dumplings, prepare the gelatin according to package directions.
Whip the whipped cream until stiff. Mix the lime zest and juice with the sour milk and sugar. Dissolve the gelatine in the sour milk and then fold into the whipped cream.
Refrigerate for a few hours until the mousse is firm. Then spread the dark berry mixture on a nice plate and poke out dumplings from the mousse with a hot spoon and place them on top of the berry mixture.
Decorate with the remaining whole berries and mint leaves, sprinkle with some lime zest and serve the sour milk gnocchi with berries.
