For rabbit in pumpkin carve the rabbit. Coarsely dice the potatoes and finely dice the carrot. Mix flour with salt and pepper, turn the pieces of meat in it.

Heat butter in a casserole and brown the meat in it. Add shallots and onions. Add white wine, thyme, carrot and potatoes. Simmer until the rabbit meat is cooked. If necessary, add a little more wine or water.

Cut off a lid from the upper part of the pumpkin. Scrape out the seeds and part of the flesh.

Cut the pumpkin flesh into small pieces and fry in a little butter, add to the rabbit ragout. Now put the ragout into the hollowed out pumpkin and put the lid on.

Place in a suitable roaster or baking dish. Brush the outer skin with oil and bake at about 180 degrees for 120 minutes.

Then serve the rabbit in the pumpkin!
