For the pumpkin strudel, cut the pumpkin flesh into cubes, salt and let stand for some time. Squeeze well.

Peel and chop the onion and fry in oil. Cut the bell bell pepper into cubes and fry with the pumpkin. Dust with flour and roast for a few more minutes. Season with cream, parsley, paprika powder, chili flakes and salt.

Place one strudel sheet on top and brush with milk. Place the second strudel sheet on top. Spread half the filling on top and roll up.

Repeat the same procedure. Place the strudels on a baking tray lined with baking paper and brush with milk.

Bake the pumpkin strudel at 180°C for about 35 minutes.
