For the potato tart with smoked meat, mix dry ferment with sugar and a little water in a small bowl and set aside. Chop the garlic into small pieces.
Preheat oven to 180 °C top and bottom heat. Mix flour and salt, add germ mixture, remaining water, olive oil, salt and garlic and mix well.
Peel potatoes and cut into very thin slices, this is best done with a cucumber slicer. Cut the smoked meat into cubes. Line a springform pan with baking paper.
Set aside some potato slices for decoration, add the rest to the dough with the smoked meat, mix and pour everything into the springform pan. Smooth the surface and top with the remaining potato slices.
Bake for 45 minutes. In the meantime grate the cheese. After 45 minutes, spread the cheese on the cake and bake for another 15 minutes. The top should be lightly browned.
Remove the finished potato tart from the pan and serve with a large portion of green salad.
