For the flatbread, put the flour, water, dry ferment and honey in a bowl and knead well. Form the dough into a ball, cover and let rest for about 10 minutes.
Then add the salt and olive oil and let knead with the food processor on the lowest speed until a homogeneous dough. Coat a bowl with a little olive oil and turn the dough several times (so that each side of the dough is covered with a little oil).
Cover the bowl with a damp tea towel and let the dough rise for about 90 minutes. The dough volume must have doubled. In the meantime, preheat the oven to 250 degrees.
Line a baking sheet with baking paper. Put some flour on the work surface and knead the dough well again. Form a flatbread and place it on the baking paper.
Then sprinkle with the sesame seeds. Put the baking sheet into the preheated oven. Bake the flatbread for about 20 minutes at 250 degrees (depending on the oven). It is ready when it has risen slightly. Serve while still lukewarm.
