For the Asian foccacia, mix the flour with water, olive oil and dry ferment to form a dough. Finely chop the pickled ginger, chili, coriander and garlic and add to the dough and salt.

Roll out a large flat of the dough and press holes in it with your fingers. Bake the Asian foccacia in the oven at 220°C for 20 minutes. Spread the finished flatbread with Sweet Chili Sauce.
