For the Pineapple Relish with Cilantro and Lime, bring all ingredients (except cilantro leaves) to a boil in a large pot. Simmer for 1-1 1/2 hours, stirring occasionally, until most of the liquid has evaporated and the rest has reached a syrupy consistency.
Stir in the cilantro leaves and then immediately pour the Pineapple Relish with Cilantro and Lime into warm, sterilized jars and seal them airtight.
