A great pasta dish for any occasion:
1. soak the bean seeds for one night. The following day, boil them with 1 1/2 liters of water.
2. in the meantime, clean the onion, garlic and celery, chop them and sauté them in olive oil. Then add to the beans form with the bone and rosemary and simmer on low heat for about 1 1/2 hours.
Blanch, skin, seed and chop the tomatoes. Sauté in oil until soft and add to the soup.
When the beans are soft, add the pasta to the saucepan and cook until al dente.
Sprinkle with chopped parsley, season with salt and season with pepper. Then remove the bone and bring to the table the stew of your choice with olive oil.
