Have fun preparing this mushroom dish!
Use the large mushroom heads whole! Heat three tbsp. olive oil in a frying pan, roast the shallots for a few minutes, then add the garlic. Remove the frying pan from the kitchen stove and cool. Mix eggs in a baking bowl, season with salt and season with pepper. Add two-thirds of the breadcrumbs, strips of ham, the contents of the pan and finally the cheese and parsley. Mix thoroughly and divide evenly among four mushroom caps. Cover each with a second cap. Grease the baking tray and place the biplanes on top of each other. Sprinkle with the remaining breadcrumbs and drizzle with the remaining olive oil. Bake for about 30 minutes at 200 °C /level 6.
