Cut the bacon from the rind and coarsely dice. Cut and slice the onion.
Clean, wash and slice the oyster mushrooms. Wash and finely chop the parsley. Fry the bacon and roast it a little bit.
Add onion rings and fry a little. Add the mushrooms. Add caraway seeds, marjoram, chopped parsley, salt and pepper. Add some water or beef broth if necessary.
Whisk the flour with the sour cream and stir into the mushrooms. Bring to the boil once and remove from heat.
Before serving, place fried eggs on top of the oyster mushrooms.
