Try this delicious pasta dish:
Press or possibly pound the chicken breast pieces between two plastic wrap sheets with a kitchen cleaver or possibly pasta walker to an even thickness.
Place the pieces of meat in a roasting pan or on an oven tray.
Stir through mirin and soy sauce and coat the chicken with it.
Roast the chicken breast pieces in a heated stove at 200 °C (gas mark 6) for 20 to 30 minutes and drizzle a few times with the mirin soy sauce.
Remove from the stove and cool a little.
Mix the sesame oil, olive oil and red wine vinegar with the mustard.
Make the noodles according to the instructions on the package. Rinse under cold running water, then drain.
Toss the pasta in the dressing until completely coated.
Toss the scallions, bean sprouts, Chinese cabbage and mushrooms with the noodles.
Cut the fried chicken pieces into very thin slices and fold into the noodles form. Garnish the leaf salad with the chili rings and bring to the table.
