Season the duck breast with pepper and salt. Bring the soy sauce, mirin and sake to the boil over high heat and then leave to cool. Heat a pan and brush with a little oil. Fry the duck breast, skin side down, over medium heat for 5 minutes. Turn and sear for another 5 minutes, until the breast is crispy on the outside but still pink on the inside. Pour the sauce over the meat and let it sit in the refrigerator for at least 2 hours (preferably overnight). Meanwhile, wash the leeks, cut them into pieces of about 3 cm and halve them. Fry them in a pan in a little oil and let them cool down. Cut the fillets into pieces about 1 cm wide, arrange and garnish with the leeks.
