For the Linzer eyes, prepare all ingredients into a smooth dough and chill for one hour. Roll out the dough thinly and cut out circles. Cut out another small hole in the middle of exactly half of the cookies so that the cookies get the typical Linzer eye shape.
Place the cookies on a baking tray lined with baking paper. Brush the cookies with hole with a little egg white and sprinkle with flaked almonds. These halves become the cookie top.
Bake the cookies for about 10 -15 minutes at about 160°C (in a convection oven). After cooling, spread jam on one slice at a time and place a slice with a hole on top. Let the Linzer eyes cool down.
