In a frying pan melt the butter, add the flour and stir with a small whisk (do not let it brown). Add the clear soup, season with salt, pepper and grated nutmeg and make about 10 minutes, stirring continuously. After cooking, thicken the sauce with cream and egg yolk. The sauce must not make during and after the binding!
