For the herring and bean salad, boil the potatoes, let cool and peel. Cut the herring into larger pieces and drain the onions well from the jar. Quarter, core and dice apples (do not peel).
Dice potatoes and cucumbers as well. Then mix all ingredients and season with sugar, salt and pepper. Cut the iceberg lettuce into pieces and wash.
Line the edges of the plate with the lettuce and place the salad on top. Garnish with cress.
