For the grilled anchovies, peel the garlic and ginger and chop them into fine pieces. Mix together with the olive oil and the sprigs of thyme and rosemary, salt and pepper well. If you like, add a dash of chili oil. Place the anchovies in a baking dish, brush with the marinade on both sides and pour the rest of the marinade over them. Marinate the fish in it for at least 2 hours.
Sear the anchovies on the grill or in a very hot pan for about 4 minutes on both sides.
Serve the grilled anchovies immediately with fresh baguette.
