For the green kids punch, peel pears and apples and cut the flesh into cubes. Peel kiwis. Wash and halve grapes.
Put the fruits in a bowl and pour the apple juice over them. Add the mint and lemon balm stalks and let the mixture infuse for 2 hours.
Meanwhile, rinse the spinach leaves and let them collapse in a little water until dripping wet. Squeeze well and mash with some apple juice to a fine puree. Strain through a hair sieve and add to the punch – the spinach gives the punch a wonderful green color.
Peel the lime zest thinly into a spiral and set aside. Squeeze the juice from the limes and add to the punch. Sweeten with a little honey, if desired. Pour the green kids punch with mineral water and garnish with lime zest and mint leaves.
