For the goose soup, cut the vegetables into large pieces. Cook a hearty soup from the vegetables and the goose carcass. Season to taste with sherry, salt & pepper. Cut the medium cooked vegetables into cubes and put them on small skewers. Fry the vegetable skewers in olive oil. Dry the tomatoes in the oven at around 130 degrees for 15 minutes.

Pour the goose soup into a cup, add the dried tomatoes, a sprig of rosemary and the fried vegetable skewers, serve hot.
