Lightly beat the egg and mix well with the sugar, butter (or oil) and milk (or buttermilk or yogurt). Sift baking powder and baking soda and gingerbread spice into the flour. If desired, you can add small pieces of almonds. Now carefully fold the flour mixture into the egg sugar mixture. Now pour the mixture immediately into the muffin tray and bake with hot air at 160 degrees on the middle rack for about 20 minutes. If desired, the muffins can still be decorated with chocolate icing and the like.
