For the Fennel Cream Soup with Shrimp, cook coarsely chopped fennel in water with bouillon cube until tender. Save fennel greens for garnish.

Finely puree cooked fennel with broth and 1/2 cup creme fraiche. Season to taste with salt and pepper.

Divide the shrimp into pieces among the soup plates. Ladle the hot soup over and garnish with fennel greens and a dollop of crème fraiche.

Serve the fennel soup with shrimps.
