Divide the chicken into eight pieces. Grate the cheese.
Mix well mustard, 1 tbsp oil, in about 1/2 tsp paprika powder and pepper. Rub it on the chicken pieces. Marinate in the refrigerator for an hour.
Heat some butter and oil in a large frying pan. Brown the chicken pieces in it. Extinguish with white wine. Cover and cook for half an hour until tender.
Remove the meat from the frying pan and place it in a gratin dish.
Boil the gravy. Add the cream. Bring to the boil.
Knead together 2 tsp flour and 1 tsp butter. Add the flour butter to the sauce form. Stir continuously for a few minutes. Add three quarters of the cheese. Let it boil again.
Pour the sauce over the chicken pieces. Sprinkle the remaining gruyere on top.
Bake in the heated oven at 220 °C for ten minutes. Let the cheese melt, but do not let it brown.
Serve with pasta.
