Instructions:

Whisk the filling ingredients well.

Season the roulades lightly with salt, spread with the filling and roll up. Securely close with roulade rings, toothpicks or spaghetti.

Heat a little oil and fry the roulades all around. Brown the onion briefly. Extinguish with enough water to just cover the roulades. Add the olives, season with cloves and cinnamon, cover and gently toss until the roulades are cooked (about an hour). Turn occasionally to the other side.

Finally, dissolve the cornstarch in the Commandaria and stir into the sauce. Bring to a boil briefly, season with salt.
