For the currant cornflakes muffins, preheat oven to 180°C and line sheet pans with paper ramekins.

In a bowl, mix the dry ingredients, i.e. flour, cornflakes, baking powder and lemon zest.

In another bowl, crack the egg and add granulated sugar, oil and buttermilk. Add the dry ingredients and mix briefly, stirring in the currant last.

Pour the batter into the cavities and bake at 180°C on the middle shelf for 25-30 minutes.

At the end of the baking time, leave the currant cornflakes muffins in the cavities for about 5 minutes, then remove them and let them cool completely.
