Heat the raisins with the rum or apple juice and leave to soak for 15 minutes. Rinse the lemon under hot water, dab dry and grate the peel. Then squeeze the lemon. Remove the peel from the apples, quarter them, remove the core and cut them into slices. Immediately sprinkle with the juice of one lemon. Coarsely chop the nuts. Separate the eggs. Whip the egg whites with the salt until stiff. Preheat the oven to 200 degrees, the hot air oven to 180 degrees. Beat the yolks with the honey until creamy, then stir in the curd cheese and millet flakes.
Stir in the raisins, lemon zest and apples, then carefully add the snow. Butter a gratin dish. Pour the batter into the dish and sprinkle with the nuts. Bake the curd casserole on the middle rack of the oven for about 1 hour. Cover with aluminum foil after 45 minutes to prevent the surface from getting too dark. Serve the casserole warm from the oven.
