For the fruit salad, peel the oranges and fillet the orange wedges, squeeze the juice from the rest.
Clean strawberries, cut into small pieces. Remove seeds from apples, pears and melon and cut into small pieces. Halve grapes, cut peaches into small pieces.
Put all fruit in a large bowl, mix with elderflower syrup and honey. Refrigerate the fruit salad for 1 hour.
