For the chocolate mousse, separate the eggs and place the yolks and vanilla sugar in a bowl. Mix the yolks and sugar over simmering water until a slightly thicker, light yellow mass is formed. Caution: the water should not boil. If it starts to boil, remove the bowl from the saucepan and continue beating next to it until cold.

Then melt the chocolate over steam and mix with the yolk mixture. Whip the cream and egg whites and mix them one by one with the chocolate-yolk mixture. Put the chocolate mousse in the refrigerator overnight (or for about 3-4 hours) and let it set.
