Instructions:

Mix stock or water with salt, sugar, mustard as well as cornstarch and bring to a boil while stirring repeatedly. Beat the yolks in a bowl and then stir them into the hot mixture all at once with a whisk or a blender. Let it bubble up again briefly. Allow to cool, stirring repeatedly. Add oil to dressing in a mixing bowl or with a blender, whisking as you would for mayonnaise. Extend with vinegar and a little more water, if desired.
