Rinse the potatoes and soften in salted water. Rinse the beet tubers and soften them as well (about 1.5 hours). Peel the potatoes and beet. Bring the milk with the butter to a boil and press the hot potatoes and beet into the boiling milk with a potato press. Salt, season with pepper and whisk (or better with a blender) until creamy.
