Preheat the oven to 250 degrees. Gut the herrings, remove the backbone, clean them, sprinkle with the juice of one lemon and season with salt. Coat the inside of the fish with mustard, stuff with finely chopped onion cubes and fold shut. Turn the herrings in the breadcrumbs on the other side and put them in a greased ovenproof dish, cover with butter or margarine flakes. Bake on the middle shelf for 20 minutes.
