For the baguette, first mix well the wheat gluten, flour, lecithin, salt, sugar and yeast. Add light butter and the water in which the ascorbic acid is dissolved, and knead together. Cover and let rise for 60 minutes.

Form baguettes, place on a baking sheet and score. Let rise for 80 minutes. Bake baguettes at hot air 230 degrees for half an hour.
