For the apricot dumplings, quickly mix the strained potatoes with the flour, butter, semolina, egg and salt to form a dough.

Form into a roll and cut into 6 equal pieces. Place an apricot on each piece of dough and form into a dumpling.

Simmer the dumplings in boiling salted water for 5 minutes, covered.

In the meantime, melt the butter and toast the breadcrumbs in it.

Remove the dumplings and roll them in the toasted breadcrumbs.

Before serving, sprinkle the apricot dumplings with powdered sugar.
