For the apple strudel, first soak the raisins in rum, cover and allow to infuse.

Wash and dry the apples, grate coarsely and leave the core. Butter a baking dish or baking tray.

Place a dish rack on the work surface and sprinkle with flour. Place the strudel dough on top and brush with melted butter. Spread the apples on the dough, leaving a border. Drizzle a little honey over the apples and sprinkle with half of the rum raisins. Grate lemon zest over the top and sprinkle with cinnamon.

Loosely roll up the strudel from the long side by gently lifting the cloth. Press the ends of the dough tightly together and carefully slide the strudel, seam side down, into the pan or onto the baking sheet. Brush with a little melted butter.

Now form the second strudel sheet and the remaining filling into a strudel and place it in the baking pan with some distance to the first strudel.

Place the apple strudel on the second rack from the bottom in the cold oven and bake at 220 °C for approx. 45 min. until golden brown.
