For the apple muffins, beat butter, sugar, salt and vanilla sugar with a hand mixer for 4-5 minutes until creamy. Add eggs gradually and mix well. Mix flour and baking powder, sift over the mixture and fold in. Add the milk and stir to combine. Color a small amount of the batter with the cocoa powder. Grease the muffin tin. Pour the dark batter into the stems of the apple cups, pour the light batter into the rest of the cups. Bake at 175 C (convection oven) for about 20 minutes.Variation 1: Pour the above batter into the well. Cut apple pieces, apple slices or an apple cut in half into fan-like wedges, spread on the sponge or press into the dough. Bake at 175°C (circulating air) for approx. 25 minutes.Variation 2: Bake the above sponge mixture, let cool and turn out. Coat with dark chocolate glaze. Drip some white couverture in dots onto the dark couverture that has not yet cooled down. Then spread with a knife to create a marbled surface. Then let the apple muffins cool.
