A great cake recipe for any occasion:
(*) Cake tin length 25cm
Peel the apples, cut them into quarters, remove the core and dice the fruit into small cubes. Immediately mix with the juice of one lemon.
Butter the cake form (quiche form) and sprinkle with breadcrumbs. Preheat the oven to 180 °C.
Mix butter, sugar and vanilla sugar for about three minutes until fluffy. Then stir in one egg yolk at a time and beat the mixture for about five minutes. Add flour and baking powder and stir in thoroughly.
Whip the egg whites with a little salt until stiff. Fold in the snow. At the end, mix apples and chocolate into the batter. Pour into the prepared form.
Bake the cake in the oven at 180 °C on the second rack from the bottom for sixty to seventy minutes, be sure to check the pins.
Rest in the pan for five to ten minutes, then turn out onto a cooling rack.
Tip: Frost with a chocolate glaze if you like, then the cake will stay fresh and wet for an exceptionally long time. It tastes best if left to infuse for 1 day.
