For the passion fruit tarts, mix the pulp of the passion fruit with the farin sugar and rum. Pour this on top of the cake layers.

Beat the egg whites with some farin sugar and a few drops of lemon juice until stiff.

Cover the tartlets with this and bake them in a hot oven until brown.
