Try this delicious cake recipe:
The egg whites measure out wonderfully, assuming that you no longer know how many you have collected in the meantime. Whip the egg whites with a food processor very leisurely until stiff, saltprise and gradually add the sugar. The whipped egg whites should seem firm, but creamy and not fluffy-cloudy.
Stir in the grated almond kernels, flour and grated lemon zest. Finally, also fold in the melted but no longer hot butter.
Fill into a greased loaf pan.
Bake for 70 minutes at 160 degrees.
This cake tastes wonderful, keeps for days juicy and fresh.
