For the fish loaf with chive sauce, soak the bread cubes in the milk. Clean the spring onion and cut into rings.
Put the fish fillets through a meat grinder and mix the mixture with the bread cubes and the spring onion. Season with salt, pepper, curry, ginger, garlic, lemon and lemon zest.
Shape the mixture into patties and toss in the breadcrumbs. Heat the oil in a frying pan and fry on both sides over not too high heat.
For the chive sauce, mix the crème fraîche (or sour cream) with the mustard, lemon juice, lemon zest and chives and season to taste.
Serve the hot fish loaves with the chive sauce.
