For the olive herb pesto, first select the olive herb, wash and shake out. Dry on paper towels, dab dry if necessary. Pick the olive herb and chop it.

Toast pine nuts, as desired, in a dry pan. Peel and crush garlic. Chop pine nuts into small pieces. Blend olive herb, pine nuts, garlic clove and lemon zest with 3 tablespoons olive oil until smooth (mortar, blender, food processor or blender).

Stir in the Parmesan cheese. Add more olive oil until desired consistency and season with pepper and salt, if desired.
