Currants are very rich in vitamin C, iron and fiber. But unfortunately they are very tart. However, together with a tender pancake and a little bit of powdered sugar, even little kids will have fun with the red berries.
Separate the egg, mix the egg yolks with milk, oat flakes, flour and salt to a thick batter. Beat egg whites until stiff and fold in. Strip currant from stems with a fork, rinse, drain. Heat half the fat in a coated frying pan and pour in the batter, sprinkle over the berries, put a lid on and bake at a low temperature for 4 minutes until the underside is golden brown and the top is cooked but still fluffy. Melt the remaining butter in flakes over the top. Now slide onto a plate and dust with powdered sugar.
Bake on one side. But if you want to bake apricots, peaches, apples or pears, you should turn the pancake over again and bake it on the other side, otherwise the fruit will remain too hard.
