For the wholemeal spelt plum cake, separate the eggs. Beat egg whites with a pinch of salt until firm. Beat yolks with sugar and sprinkled nuts until very foamy.
Stir in applesauce and oil alternately on lowest speed. Slowly stir in the flour sifted with baking powder and the water, (the mixture should remain fluffy), gently fold in the snow and spread on a baking tray lined with baking paper or baking foil.
Since wholemeal flour needs time to swell, only now pit the plums and cut them in half. Preheat oven to 180 degrees. Cover the dough with the halves and put in the oven for about 20-25 minutes.
Prepare the cake jelly with 1/2 tablespoon cinnamon according to the instructions and brush the cooled wholemeal spelt plum cake with it.
