Preparation: Sauté shallots in the warm light butter or butter.

Douse with the liquid. Mash everything with the Weggli, pass through a sieve back into the frying pan, season, heat again. Add cress and serve on the spot.

Tip: replace white wine with vegetable broth.

Additional dish: e.g. steamed spring vegetables.
