This marinade goes well with fish and white meat. It is plenty for 1 kg of meat.
Stir the vinegar with the shallots, garlic cloves and herbs, season strongly with salt and freshly ground pepper. Finally, add the oil.
If you like, you can replace the vinegar with white wine or the juice of a lemon.
