For the watercress topping, cut the radishes into small pieces, reserving one for decoration. Wash the watercress, spin dry and cut into very fine strips and then chop them again.

Leave some whole for the decoration. Mix curd with oil, salt and pepper, stir in watercress and radishes. Decorate and serve.
