Prepare a beef soup and keep it warm.
Finely dice the bread and the bacon and put them in a suitable bowl.
Beat the eggs with the milk, add the finely chopped parsley and pour the whole on the bread. Cover with a clean kitchen towel and let it rest for about half an hour.
Then roast the finely chopped onion in the butter and add it to the bread as well. Season with salt and stir in the flour well. The quantity should not be too firm.
In a large saucepan, bring enough salted water to a boil. With wet hands, form balls from the quantity and put them into the boiling water. Let simmer at moderate temperature for about 15-20 minutes.
Then take the dumplings out of the water on the spot, place them in soup plates, pour the soup over them and sprinkle with chives.
