Sauté the chicory stems in a saucepan with a little water and a little butter.
Wrap each bunch with a slice of cheese and a slice of ham, then wrap in a slice of thawed and rolled out puff pastry. Brush the edges with egg white and press firmly until smooth.
Brush the finished rolls with the mixture of egg yolk and whipped cream and place them in a buttered gratin dish.
Bake in a heated oven at 200 °C for about 20 minutes.
Tip: Serve with a cheese, tomato or mushroom sauce.
