For the Christmas white dream pastry, beat the eggs, powdered sugar, vanilla sugar until foamy. Mix flour with baking powder and stir into the egg mixture.
Spread the dough on a baking sheet lined with baking paper and bake in a preheated oven at 190 degrees for about 12 – 15 minutes.
Remove the paper and allow to cool. Then cut out sponge cake slices of approx. 5 cm in diameter. For the cream, mix some milk with pudding powder. Soak gelatin in cold water.
Bring the remaining milk and sugar to the boil and stir in the vanilla pudding powder and bring to the boil. Pull away from stove top and dissolve gelatin (stop boiling).
Stir the pudding until cold. Whip the cream until stiff and stir into the cooled pudding. Put the cream in the refrigerator (it will be easier to spread). Fill the sponge slices with it and coat all around with cream and roll in coconut.
