For the zucchini soup, peel and dice the onion, heat the oil and sauté the onion cubes until translucent. Stir in 2 tablespoons cold water and let everything boil briefly.

Wash zucchini, cut into slices and put some aside. Cut the rest of the slices in half and add to the onions.

Extinguish with vegetable soup and continue to simmer over medium heat for 5 minutes. Then puree the soup until it is creamy.

Season the zucchini soup with salt, pepper and nutmeg.
